Wow – I made this at the weekend! You’ll find the recipe here. Whenever I make a new recipe, I follow it to the letter. Then next time, I adapt it, if I want to. This recipe is hearty – it was perfect for the stormy, wet weather we had over the weekend. I bought organic pinto beans from my local refill shop and soaked them overnight. Pinto beans look so beautiful – I love the colour. I used brown basmati rice, which I’d also previously bought from the same shop. So will I be making this again? Absolutely!Next time I’ll add more garlic and some chilli. It’s perfect with a range of different green vegetables added too. I had mine with spinach. It’s gluten free, vegan and beautifully balanced. Enjoy.
