#Mexican #refried #beans at the weekend and beyond

I made refried beans at the weekend. There are lots of recipes out there, I used one very similar to this one, perhaps with a bit extra garlic as I do love garlic. I bought dried black beans from my local refill shop and soaked them overnight, then the following day proceeded with the recipe. I didn’t completely blend all the beans as I wanted a varied texture, I mashed them so some beans were partly in tact.

So what’s so good about them? Well beans and pulses are amazingly nutritious – full of fibre, high in protein and low in fat. They also offer a range of vitamins and minerals and are very affordable.
